The one thing I have learned during my time on the paleo diet is I have to be prepared. Being a busy mom of six means that I am running before the sun even comes up. So I need food that is fast while still being Paleo friendly, that’s where paleo appetizers will come in.
Take one day to and cook three or four appetizers. Keep them in a sealed container in the refrigerator or portion them out separately. Then when your hungry and don’t have time your ready to go. So on to this very easy recipe..
Thinly Sliced Peppered Roast Beef
Cut asparagus ends and peel the outside with a potato peeler. Cut ends of green onion, slice in half a couple times till you have slivers of green onion and cut those in thirds.
Lay an asparagus head and two to three slivers of green onion on to the slice of beef. Gently roll the spears and beef together.
Saute on medium heat for 5 to 7 minutes.
Sit and enjoy or save for later.
- Vegetarian Alternative: Wrap asparagus in cabbage leaves and tie with a long slightly cooked green onion.
