Game Day Recipe – Chicken Pringlers

 

Chicken Pringlers 


INGREDIENTS

·         2- 6.38-ounce cans of  Pringles (BBQ, Honey Mustard, Xtreme Blastin Buffalo or any of your favorite Pringles flavors)

·         2 pounds of boneless chicken breast or chicken tenders, cut into 1 1/2” nuggets

·         2 cups of skim milk or buttermilk

DIRECTIONS

1.       Preheat oven to 400°F with a rack in the middle.

2.       Place nuggets in milk.

3.       Puree the Pringles in a food processor, and pour into a large sealable plastic bag. Place two or three nuggets at a time in the bag and shake to coat.

4.       Spray a cookie sheet with cooking spray, and place the well-coated nuggets in a single layer. Bake in the preheated oven for 20 minutes.

5.       Remove and let stand, uncovered, 5 to 10 minutes to crisp.

Light and Yummy Fillo Recipes

I am always looking for new and interesting recipes.  Here are a couple recipes using chicken, fruit and fillo cups.  The possibilities for these little cups seem endless.   I am thinking pot pies, apple pies, etc…

 

 

Chicken & Pico de Gallo

Create delicious Chicken & Pico de Gallo appetizers as a light summer snack.

Ingredients
1/2 cup cooked medium-diced chicken
1 small diced avocado
1 small seeded and diced tomato
2 tablespoons chopped green onion
2 teaspoons minced jalapeño
2 tablespoons mayonnaise
1 tablespoon vinegar
1 tablespoon chopped cilantro
1/4 teaspoon salt
15 Athens® Mini Fillo Shells (1 box)
15 cilantro sprigs, for garnish

In a small bowl combine chicken, avocado, tomato, green onions, jalapeño, mayonnaise, vinegar, cilantro and salt mixing well. Chill for 1 hour. Place 1 rounded tablespoon of mixture into each Fillo Shell. Garnish each with a sprig of cilantro. Serve immediately.

Yield: 15 appetizers

 

 

Light Fruited Pudding Cups

Serve Light Fruited Pudding Cups as a simple and tasty summer dessert for any occasion.

Ingredients

1/2 cup low fat vanilla pudding
2 tablespoons drained, crushed canned pineapple
2 tablespoons small diced strawberries
15 Athens® Mini Fillo Shells (1 box)
1 whole kiwi, peeled, sliced, and each cut into eighths, for garnish

In a small bowl, combine pudding, pineapple and strawberries. Chill for 1 hour. Spoon 1 rounded teaspoon of filling into each Fillo shell. Garnish with sliced kiwi. Serve immediately.

Yield: 15 Desserts

Chicken Delight

Momma Young’s Chicken Delight

Marinade chicken tenders, breasts, etc.. in the following:

2 tbsp Olive Oil
1 tbsp Kosher Salt
1/2 tsp Paprika
1/2 tsp Garlic Powder
1/4 tsp Red Pepper (ground)
Pinch Black Pepper

Place in a sealed bowl or zip-lock and let it sit anywhere from two hours to over night. You can marinade however long you like.

Give the the chicken one more swim in the marinade and place on the grill for 10 minutes, give or take depending on the size you are using.
