Cinco De Mayo recipe ideas

Cinco De Mayo is just around the corner, in fact it is tomorrow.  There are many ways to get in on the celebration.  Here in the Reno/Sparks area, there is a huge party; music, food and people galore.

If huge crowds aren’t your style or if your like me and don’t feel like herding your little ones through a crowd, consider festivities at home.  The easiest way to do that is with food.  Some of my favorite dishes are warm cozy home food that my Nana use to make ( my Abuela didn’t like the title so we called her Nana.)

My absolute favorite and not hard to make meals are Albondigas and Sopa, click on the links for my recipes.  Now if you have time, like a day or two…  Tamales are delish…

This year we are going to stick to the simple and have a taco night.  I’ll stop by my favorite tortilla shop – El Rosals – for fresh tortillas (a great place for fresh masa when your ready to tackle those tamales).  Along with the taco’s I’ll serve fried papas, Spanish rice and refried beans.

How about something really easy to make?  Salsa…

Momma Young’s Salsa

4 Tomatoes
4 Green Onions
1 sm can diced green chilies
6 Cilantro Stems
1 minced Garlic Clove
1/2 tsp salt
Chop everything and combine.
It tastes even better the next day, it will look “watery” just stir it up and enjoy!  If the tomatoes are out of season or just don’t look good, you can use a can of tomato sauce.
This is the super mild version.  To add some heat, get hot diced chilies, and add 1 can El Pato tomato sauce (its hot tomato sauce).

Albondigas

Albondigas

Mix the following thoroughly in a bowl:

1 pound lean ground beef
1 Tbsp Flour
1 Egg
1/4 Can Tomato Sauce

Finely Chopped:
1/2 small Bell Pepper
1/2 small Onion
1 clove Garlic
Cilantro

Form mixture into 1″ balls and add to pot of water. Add remaining bell pepper, tomato sauce, 3/4 cup Rice, pinch of salt & pepper to pot and bring to boil.

Cover and cook for 1 hour. Add a pinch more cilantro towards the end and enjoy.
