Green Melon Smoothie…

There’s a lot of buzz going on about “green smoothies” and all the health benefits of them: Greens are high in calcium, magnesium, iron, potassium, phosphorous, zinc and vitamins A, C, E and K. They are crammed with fiber, folic acid, chlorophyll and many other micro nutrients and phytochemicals. What’s not to love?  It’s especially good for getting lots of  nutrients into kids without them realizing it!  (You may want to decrease the ginger for the kids)

I love this slightly sweet, slightly spicy smoothie for lunch or an afternoon pickup!

Spicy Green Melon Smoothie

Ingredients

  • 1 cup arugula
  • 1.2 cantaloupe, peeled and seeded
  • 1/2 honeydew, peeled and seeded
  • 1 orange or tangerine, peeled
  • 1/2: ginger, peeled
  • 1 cup orange juice
  • 1 tablespoon flax meal

Instructions

  1. Add all ingredients into the blender except only 1/2 the orange juice. Add 1 cup ice and blend until smooth. Add the remaining orange juice until the desired consistency .
  2. Four servings

Sometimes getting your family on board for Green smoothies can be hard. They aren’t always as “green” as we are, but once they taste how delicious they are they will change their minds!
