Yep we are making sugar cookies again but this time they are St Pattys Day Sugar Cookies… We were contemplating what kind of sugar cookies to make? Four leave clovers of course, but we also decided to make gold coins for our “Pot of Gold” Cake.
Funny thing is, even with all the sugar cookies we make a simple round cookie cutter could not be found much less a shamrock. So Momma and daughters improvised, we used an apple corer to round out the shamrock leaves. It worked out well, but the shamrocks were small and it was tedious but it did serve a purpose.
For the small circles I used the steel handles of my espresso cup. That worked out perfectly.
We frosted the shamrocks green and the coins yellow, but the coins got some added bling. Aren’t they cute.
I think they will look perfect on our pot of gold cake or just to nom on for St. Patrick’s Day. The littlest agrees because this cookie didn’t even make it to the tray or to our cake project.
