I didn’t want to make a plain old pie, I wanted to make something different. So I decided on some Pumpkin Muffins they are super easy and the kiddos love to help. I assembled my ingredients: Cake Mix, oil, pumpkin, powdered sugar and of course the.
With the help of my girls, we added a cake mix (try yellow or butter), 1 cup of pumpkin filling and a teaspoon of pumpkin spice. You can add eggs if you would like to make it a little more fluffy. But I like it thicker and decedent.
My oldest stirred and at first she thought we might need more liquids, but it was fine.
We added a heaping table spoon to greased muffin cups. It yields 12 muffins.
Put them in the oven according to the muffin directions on the cake mix box. Next it was time to start the glaze.
For the frosting we added half a pound of confectioners sugar, 1/2 cup pumpkin filling and another teaspoon of the pumpkin pie spice. We mixed till all the lumps where gone. Now it is time to wait for the pumpkins to come out of the oven.
Ok muffins are done, going to let them cool a little bit.
Once the muffins are cool, we dipped them in the frosting just to cover the top.
And viola…. They looked pretty and tasted delicious. Enjoy!
