Pistachio Recipe Love – Pistachio Cookies

My oldest daughter and I love pistachios; in pudding, ice cream, you name it. Then I realized we have never posted a pistachio recipe. So this week let’s make up for lost time with some Pistachio Recipe Love.

Pistachio Cookies

Pistachio Cookies


  • 1 cup Cake flour
  • 1/2 cup Sugar
  • 1/2 cup Oil
  • 1 Egg
  • 1/2 teaspoon Baking soda
  • 3/4 teaspoon Baking powder
  • 1/4 cup American pistachio kernels, chopped


  1. Heat sugar and oil in a sauce pan using low heat. Blend the mixture until the sugar turns golden. Remove from heat and transfer sugar mixture to a mixing bowl. When cool, add the egg to the sugar mixture. Blend in cake flour, baking soda, and baking powder and mix into a dough. Divide the dough into small parts and shape them into cookies on a baking tray. Spread pistachio kernels on the top. Bake the cookies at 400⁰ F for approximately 15 minutes until golden.
