My only experience with Pesto was watching Rachel Ray whipping it up in her food processor, I had no idea that the green concoction she was making tasted so good. After trying Pesto for the first time I immediately knew I had been missing out. Pesto is such a wonderful flavor combination and good on almost anything, so I of course had to create a Pesto Sandwich Recipe.
Back when I was making sandwich recipes for the Mezzetta #MakeThatSandwich contest they sent me a couple jars of pesto. I had made so many sandwiches but hesitated on doing anything with the pesto, if I had only known how delicious it was. After trying their amazing Pesto and forcing myself to put the spoon down, I looked at the end of my Boule loaf and decided to create the Mini Pesto Crustini.
The end of the Boule loaf was perfect for this delicious little sandwich. Brush the slices of Boule with olive oil and toast in a pan.
Generously add some Mezzetta Homemade Style Pesto on each slice.
Next I added a generous portion of Mezzetta’s Roasted Red Peppers. These aren’t pickled but smokey and delicious.
Then add a nice slice of deli turkey rolled on top or leave the meat of for a delicious vegetarian snack.
Top with a Mezzetta Jack Cheese stuffed olive.
