I tell you what, I am a big chicken when it comes to using raw eggs in a recipe, but according to the folks at Davidson’s, we can use these raw eggs in recipes with zero risk of Salmonella to our family!
Safe Caesar Salad Dressing
Servings: 4 / Active time: 15 mins / Total time: 15 mins
1 Safest Choice™ pasteurized egg
1 to 2 tsp finely chopped garlic (1 to 2 medium cloves)
1 anchovy fillet, mashed (or 2 inches of anchovy paste)
Pinch coarse salt
2 tbsp freshly squeezed lemon juice (juice of ½ lemon)
3 drops Worcestershire sauce
6 tbsp extra-virgin olive oil
- In a blender or food processor, combine all ingredients except olive oil until blended.
- With the motor running, slowly drizzle in the olive oil until dressing is well combined and creamy.
- Toss dressing with freshly grated Parmesan cheese, romaine lettuce, croutons, and coarsely ground black pepper and serve immediately.
