Oh how I love some caramel corn now an then and crave heavily when I’m pregnant, but I’ve never had it with honey and I’m eager to try… This recipe is from Golden Blossom Honey and they have a great recipe prefect for any holiday. I think it would make a great gift in a tin..
This Caramel Corn recipe is an easy treat to brew with the kids at home.
1 cup butter
1 cup light brown sugar, lightly packed
3/4 cup GOLDEN BLOSSOM HONEY
1/2 cup dark corn syrup
3/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
6 quarts plain popcorn, popped (3 microwave bags of natural flavor)
Over medium heat melt the butter then blend in the brown sugar. Add the next 3 ingredients, stirring constantly until mixture boils. Cook uncovered and without stirring for 5 minutes. Remove from burner and add baking soda and vanilla. Pour warm mixture over popcorn and toss until coated.
Spread popcorn out on two cookie sheets and bake at 250° for one hour. Every 15 minutes stir the popcorn to keep it from burning. Allow to cool.
